It is 100% Nerello Mascalese, from vines over 40 years old, grown at an elevation of 580 meters and facing north. After destemming, the grapes are gently crushed, and natural yeast fermentation begins using the pied de cuve method, with skin contact for about 50 days. The wine then spends 18 months in neutral epoxy tanks of 1,500-2,500 liters, followed by another 18 months in bottle before release, with no fining.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003eIn the glass, it shows a pale, transparent brick-red ruby hue. On the palate, fine and dense tannins spread like a delicate net, while taut acidity gives the wine a straight structure. The coolness from the high elevation keeps the fruit vibrant until the end. Destemmed grapes are fermented with wild yeasts in large Slavonian oak vats, remaining on their skins for about 3 months until full fermentation is achieved without temperature control. Afterwards, the wine spends 3-4 years on its lees in 25-35hL Slavonian oak casks, then is bottled without fining, filtration, or sulfur dioxide, and released after several more years of aging. The finish leaves a pleasant bitterness of nuts and citrus peel that lingers. These vines also served as the source material for the entire estate's replanting. After partial destemming, the wine ferments with indigenous yeasts in open wooden vats without sulfur dioxide, undergoing maceration for several weeks using the 'cappello sommerso' (submerged cap) method instead of pump-overs. It is then aged in large neutral oak barrels and bottled without fining or filtration. New barriques have not been used since the 2000 vintage.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003eIn the glass, a deep, almost opaque garnet with purple hues fills the senses. On the palate, a silky texture spreads broadly, yet within it, fine tannins and a precise acid backbone stand clear, offering both the coolness of the Alps and Mediterranean fruitiness simultaneously. The finish lingers with gravelly mineral notes, cocoa, and licorice.
