This is why they are considered a pinnacle of traditional Côte-Rôtie today.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003eThis wine is made from 100% Syrah sourced from 20 plots across 15 lieux-dits. Different schist soils, aromas, and vine ages from places like Fongeant, Côte Blonde, La Landonne, Côte Rozier, Le Plomb, Chavaroche, Les Moutonnes, Les Lézards, Gerine, Le Truchet, Leyat, Bonnivières, Côte Bodin, Tartaras, and Rôchins come together in a single bottle. Approximately 90% undergoes whole-bunch fermentation with a three-week maceration. All plots are fermented and aged separately for 22 months (15% new oak, mostly demi-muids) without racking, then blended at the end. \"Assemblage\" (blending) is the word Jean-Paul considers most important.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003eThe glass is filled with a deep, inky magenta. The nose first opens with raspberry jam, blackberry, and blueberry, layered with crushed violet, licorice, smoked bacon, black olives, and incense, all topped with the smoky minerality of schist. On the palate, the tannins are as fine as velvet, and the cool acidity characteristic of 2021 extends straight, favoring fruit and aroma over weight. The finish leaves a very long impression of stem-derived spice and salty minerality.
