Whole clusters are placed directly into wooden fermentation vats and fermented for about three weeks with natural yeasts, with pigeage performed twice daily. It then ages on its lees for about 11 months without racking, and is bottled unfiltered without adding sulfur dioxide during the winemaking process.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003eIn the glass, it shows a pale, transparent ruby color. On the nose, raspberries, cranberries, peonies, and dried roses emerge first, followed by nuances of licorice, cool stems, and wet stone minerality. The palate is light and flowing, yet the tannins are very fine and the acidity is linear, giving it a clear structure. The finish offers a long persistence of salty clay-limestone minerality and red fruit.
