In 1995, Stanko Radikon decided to return to the long maceration method his grandfather Franz Mikulus used, and from the 2002 vintage onwards, he added no sulfur dioxide. It is one of the origins of what is today called 'orange wine'. After his passing in 2016, his son Saša continues in the same vein.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003e'Jakot' is 'Tokaj,' the old name for Friulano, spelled backward, a witty response to the EU's prohibition on using the Tokaj name. Destemmed grapes are fermented with wild yeasts in large Slavonian oak vats, remaining on their skins for about 3 months until full fermentation is achieved without temperature control. Afterwards, the wine spends 3-4 years on its lees in 25-35hL Slavonian oak casks, then is bottled without fining, filtration, or sulfur dioxide, and released after several more years of aging. The specially designed 500ml bottle with a narrow neck and cork was personally designed by Stanko, who calculated the oxidation rate.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\" dir=\"ltr\"\u003eThe glass is filled with a deep, clear amber hue. On the nose, dried apricot and orange marmalade open first, followed by layers of black tea, walnut, beeswax, chamomile, dried herbs, and subtle spices. On the palate, tannins from the skins create an uncharacteristic grip for a white wine, permeated by a salty and straight acidity. The finish leaves a pleasant bitterness of nuts and citrus peel that lingers.
