    Pascal Agrapart is one of the most respected growers in Champagne, based in Avize, a central village in the Côte des Blancs. Together with his son Ambroise, he cultivates about 12 hectares himself and is a Récoltant-Manipulant (RM) who does not buy grapes. Most of his vineyards are Grand Cru-classified, and many plots are over 70 years old. He has long tilled his vineyards without herbicides or synthetic pesticides and uses his own compost, but he is also known for not actively promoting this fact.

    'Terroirs' is a cuvée blended from Chardonnay from selected old-vine plots across two or more vintages from the four Grand Cru villages of Avize, Oger, Cramant, and Oiry. It is fermented with natural yeasts, undergoes full malolactic fermentation, and a portion of the reserve wine is aged on its lees in 30-year-old demi-muids. Disgorgement occurs about two months before release, and the dosage is limited to 3-5g per liter.

    In the glass, it shows a clear lemon hue with fine, rising bubbles. On the nose, lemon peel and green apple open first, followed by nuances of honeysuckle, white peach, freshly baked bread, hazelnut, white pepper, and cool mint. On the palate, a creamy mousse gently envelops, but beneath it, a distinct chalky grip stands firm, and the acidity extends vertically and straight. The finish slowly reveals minerals of sea salt, citrus oil, and crushed seashells. It is a textbook balance for a Blanc de Blancs.
