Vouette et Sorbée is a small domain of just over 5 hectares cultivated by Bertrand and Hélène Gautherot in Buxières-sur-Arce in the Côte des Bar. Bertrand, who had long sold his grapes, produced his first cuvée, 'Fidèle', in 2001 at the suggestion of his friend Anselme Selosse. Since 1998, they have transitioned to biodynamic farming (Demeter certified), using their own compost, plowing the fields only with horses and lightweight tractors, replanting fruit trees, and raising cows. Bertrand refers to himself as a farmer rather than a winemaker.
Unlike the fine chalky soils of northern Champagne, the Côte des Bar has Kimmeridgian and Portlandian limestone-clay soils similar to Chablis. 'Fidèle' is 100% Pinot Noir from the Kimmeridgian plots of Vouette and Bion, based on a single year's harvest and blended with 3-7% from a perpetual reserve started in 2001. All fermentation takes place in oak with natural yeasts, malolactic fermentation occurs naturally, and the wine is bottled without chaptalization or dosage.
The glass is filled with a deep golden color with an apricot tint, and fine, quiet bubbles rise gently. The nose first reveals baked apple and quince, apricot and citrus peel, followed by brioche, hazelnut, dry earth, and faint spices. In the mouth, instead of a strong mousse, a dense and vinosity texture unfolds, feeling more like a sparkling white Burgundy. The finish is bone-dry and straight, with fine tannins and a lingering savory salinity. It is recommended to serve at around 12°C in a white wine glass rather than a flute.
